Mutton <br />2 onions, sliced <br />1½ cups fresh coconut, grated <br />1½ tbsp. Ginger and garlic paste, each <br />2 onions, finely chopped <br />2 tbsp. Malvani masala <br />2 tbsp. Chilli powder <br />1 tsp. Turmeric powder <br />Salt, to taste <br />5 tbsp. Oil <br /> <br />For Malvani Masala, roast the following spices, cool down to room room temperature and then grind in a mixer/grinder. <br />15 red chillies <br />2 tbsp. Coriander seeds <br />1 tsp. Cumin seeds <br />1 tsp. Caraway seeds <br />½ tsp. Mustard seeds <br />2 tsp. Aniseeds <br />1” Cinnamon <br />1 Star anise <br />5 Cloves <br />5 Tirphala <br />2 Black cardamoms <br />10 Peppercorns <br />1 tsp. Stone flower <br />10 cassia buds <br />½ tsp. Nutmeg <br />¼ tsp. Asafetida <br />1 tsp. Turmeric <br />1 mace <br />2 Bay leaves <br />1 tbsp. Oil <br /> <br /> <br /> <br />Method:- <br />1. Roast the coconut and the onions until they change colour and then grind to a fine paste. <br />2. Heat oil and fry the onions until golden brown. Then add ginger and garlic paste and sauté until the raw smell goes off. <br />3. Add chilli powder, turmeric powder, malwani masala powder and mix well. Add mutton and fry it for 5-7 minutes and then add the ground onion and coconut paste and mix well. <br />4.
